Salmon steaks and salmon filets are some of the best fish tastes on the planet. A slow grill and a little patience are all you need to achieve perfect grilled salmon!

  1. Fire up the grill. For a charcoal grill, heap the coals to the side so you have a 'hot' area and a 'warm' area. For a gas grill, set the temperature to 325 degrees F.
  2. Use a small brush or a paper towel to lightly apply mayonnaise onto one side of the salmon. You can use olive oil if you prefer. Place it on the warm part of the grill. (The mayonnaise keeps the fish from sticking, and will burn off.) Coat the visible side of the fish with more mayonnaise, so that when you flip it, the bottom will not stick.
  3. Turn the salmon over after 3 - 5 minutes. Allow it to cook on the other side for 3 minutes.
  4. Place the salmon on the hottest part of the grill to get grill marks on it - only takes a minute or so on each side.
  5. Serve and enjoy!

Tips

  • Salmon goes really well with rice pilaf and a green salad.
  • The chef usually does a better job if provided with a cold beer or a nice glass of wine.

Steps

  1. Cook the shrimp (skip this step if shrimp are pre-cooked):
    • Shell shrimp, if needed.
    • Boil 6 cups of water in a large pot.
    • Add the shrimp.
    • Boil until vividly pink
  2. Heat 1/3 cup cooking oil and 1 tbs sesame oil in a medium skillet.
  3. Add garlic, onions, mushrooms, and shrimp.
  4. Stir until everything is evenly oiled, and onions and mushrooms are tender. Set aside.
  5. Heat soy sauce, pepper, ginger and the remaining oil in a large skillet or wok.
  6. Add vegetables and stir to coat evenly with oil and soy mixture.
  7. Cook briefly, so that vegetables are still crisp.
  8. Stir in shrimp mixture, stirring until vegetables are tender.

  1. Remove the Prawns shells. First pull off the head. Then rinse the prawn in water. Remove the shell from the middle part of the prawn. Hold the exposed top end and pull the tail to remove the rest of the shell.
    • Then use a sharp knife to make a shallow slit down the middle of the curved back and pull out the dark colored vein. You can use your fingers or a cocktail stick to do this.
  2. Rinse the prawn again.Good prawns should be a bluish/green color once peeled.
  3. Be careful that you don't chop your fingers
    Chop the ingredients.Peel and finely dice 2 onions, then 4 tomatoes.Then chop 2 green chillies.
  4. Mix the ingredients.
    Start frying.Put a large non-stick frying pan over a medium heat. Add 3 tablespoons of vegetable oil
    • 2 sticks of cinnamon
    • 4 cardamom pods and 4 cloves.
  5. Fry for about 30 seconds, stirring continually.
  6. Stir fry for a few minutes
    Add finely chopped onions and chillies.Add the 2 chopped onions and 2 green chillies to the pan, and fry for about 5 minutes or until the onions are a light golden brown. Stir frequently to stop the onions burning.
  7. Add the ginger and garlic paste
    Ginger and garlic paste.Now add 2 tablespoons of ginger and garlic paste. Stir well for a couple of minutes.
  8. Give your curry a spicy look.
    Add the spices.
    • 1/2 a teaspoon of turmeric,
    • 1 teaspoon of red chilli powder and
    • 1 teaspoon of coriander powder
    • half a teaspoon of garam masala and fry for 5 minutes over a low heat, stirring frequently.
  9. Add the finely chopped tomatoes followed by 1 tablespoon of cumin powder. Then stir. Add 1 tablespoon of tomato paste and stir it in. Add a cup of water and keep stirring until the water is absorbed. Turn the heat down, put the lid on, and leave to simmer for 10-15 minutes, or until the oil separates from the dish and rises to the top.
  10. Add the prawns and mx it up.
    Add the prawns. Turn the heat back up to high and add the prawns to the pan. Then stir in 2 generous pinches of salt.
  11. Add water to the pan.Add approximately 200ml of warm water to the pan. Stir. Then put the lid on and bring the heat down. Leave for about 10 minutes or until the prawns are cooked. check occasionally. The prawns are done when they turn pink and opaque. When they are ready, turn the heat off.
  12. Garnish with coriander
    Garnish with coriander. Finely chop the coriander and save a couple of good leaves to garnish. Now stir in the coriander to finish the dish.
  13. Serve with medium heat.Lay the coriander leaves onto the curry, and serve.

Tips

  • Dip your fingers in oil before you do this to stop the chilli juices from stinging your fingers.

  1. Fillet fish and make sure you get rid of all the bones.
  2. Leave the skin and scales on the side after you remove it from the fish.
  3. Prepare your flavorings. Heat the grill until it is medium hot.
  4. Place the fish fillets back on top of the skin, scales down across the grill (this will help keep your fish from sticking to the grill).
  5. Apply the butter mixture with spoon or brush covering the entire fish.
  6. Cook it on the grill until the meat has turned white.
  7. Test for doneness by poking the tip of a knife into the center of the flesh. If it is opaque, then it is done. Do not worry about the scales and skin, the meat will come right out of that with little or no effort.

  1. Grab your potatoes and peel them; you can leave the potato skin on if you prefer.
  2. Get a knife and cut your potatoes into thin wedges the long way, so they look like fries.
  3. Cook the chips:

    • Cook them in a frying pan. Just like your battered fish, get a deep pan and coat the bottom with vegetable oil. Set it on low and place your potato wedges into the pan.
